Phoenix Golden Tilapia comes in three forms: fresh fish (live or chilled), five frozen products (fish paste, fish noodles, fish tofu, fish balls and fish cake), and canned fish in savory sauce. All of it comes from Tianmei Agriculture's farm in Nansha, Guangzhou, where the fish are purged in clean water for 21 days before harvest.
What is the fresh fish like?
Each fish weighs about 750 g and is sold live or chilled. Before harvest it spends 21 days in clean water without feed, so the flesh is firm with no muddy taste. There is no black belly lining to scrape and no pin bones in the fillets, and the fish are raised without antibiotics.
- Raw: slice it paper-thin for Shunde-style yusheng, or cut thicker slices for sashimi.
- Steamed: steam the whole fish for 8 to 10 minutes over boiling water, then finish with soy sauce, ginger and scallion.
- Hotpot: slice and cook until the flesh turns white; it stays firm.
- Pan-fried: sear both sides, then finish in a sauce.
