Raised in Tanks, Purged 21 Days

Before harvest the fish are moved to clean water and not fed. They empty their gut, burn off excess fat and release the compounds behind a muddy taste, leaving firmer flesh with a clean flavor.

A typical purge lasts 5 to 7 days. Phoenix Golden Tilapia is purged for 21 days.

Preparing
Scale, gill and gut the fish, rinse, and score the thick sides. There is no black lining to scrape.
Raw
It can be eaten raw. Try it Shunde-style yusheng: slice it paper-thin, top with shredded ginger, scallion, lime leaf and fried peanuts, then toss with oil and soy sauce. Or cut thicker slices and serve as sashimi with soy and wasabi.
Steamed
Steam a 750 g fish whole over boiling water for 8 to 10 minutes, then finish with soy sauce, ginger and scallion.
Hotpot
Slice and cook until the flesh turns white; it stays firm.
Pan-fried
Sear both sides, then finish in a sauce.

FAQ

What is Phoenix Golden Tilapia?

It is Tianmei Agriculture's fish, raised in standard tanks in Nansha, Guangzhou, with a rosy body, leopard spots, no black belly lining and no pin bones. It is also sold as red tilapia.

Is it a freshwater or saltwater fish?

It adapts well: it can be raised in fresh, brackish or salt water. Ours is raised in standard tanks in Nansha, Guangzhou.

What is the 21-day clean-water purge?

Before harvest the fish are kept in clean water without feeding. They empty their gut and release the compounds behind a muddy taste. A typical purge lasts 5 to 7 days; ours lasts 21.

Does it taste muddy?

The 21-day clean-water purge removes the muddy taste and leaves the flesh firm. Steaming the fish whole is the best way to taste it.

Can you eat it raw?

Yes. The flesh is firm with no muddy taste, so it suits Shunde-style yusheng: paper-thin slices tossed with ginger, scallion, lime leaf, fried peanuts, oil and soy sauce. It also works as sashimi with soy and wasabi, or steamed whole.

Is Phoenix Golden Tilapia raised with antibiotics?

No. Antibiotics are not used in raising Phoenix Golden Tilapia.
